The Fresh Autumn Black Truffle (Tuber uncinatum Chatin) is botanically very close to the Summer Black Truffle (Tuber aestivum) but considered a separate, superior variety thanks to its more developed, complex aroma.
Harvested from October to January, when temperatures drop and the truffle reaches full aromatic maturity, the Uncinato develops a richer profile than its summer counterpart: earthy and mushroom-like, with pronounced hazelnut, spice and a deeper, more lingering finish.
It represents excellent value for money compared to the prestigious winter truffle varieties while offering a significantly more complex experience than the summer truffle.
Seasonality: October – January. How to use: shaved raw over pasta, risotto, poached eggs or beef carpaccio.
