How to properly store fresh truffles?
Fresh truffles are a very delicate natural product and must be stored with care.
To keep it at its best:
- Store it in the refrigerator at a temperature between 2°C and 7°C
- wrap it in absorbent paper or a cotton cloth
- Place it in an airtight glass or plastic container
- The paper should be changed every day , because the truffle naturally releases moisture.
This method allows you to:
- preserve the scent
- prevent aromas from spreading in the refrigerator
- maintain product quality for longer.
A little traditional trick: you can store truffles with fresh eggs in a closed container. The porous shell will absorb the truffle's aroma, making it perfect for making truffle eggs or omelettes .
How long does fresh truffle keep?
The duration depends on the truffle species .
Indicatively:
- Black summer and hooked truffle : up to approximately 7–10 days
- Prized black truffle : approximately 6–8 days
- Fine white truffle : 4–7 days
- White truffle : 5–7 days
To truly enjoy its aroma and intensity , the advice is always the same:
👉 consume it within a few days of purchase , ideally within 3–5 days .
Should truffles be washed as soon as they are purchased?
No.
The truffle should be washed and cleaned only shortly before use .
Washing something that won't be consumed immediately accelerates its deterioration, because water increases the humidity and reduces its shelf life.
It is best to store it with a slight residue of soil , which helps protect the product.
How do you clean truffles before using them?
Cleaning is simple but must be delicate.
- Use a soft brush (or a kitchen brush).
- Pass the truffle under a gentle stream of cold water .
- Remove any remaining soil.
- Dry it immediately with paper towels or a clean cloth.
Once cleaned it is ready to be sliced or grated directly onto the plate .
Is it better to buy truffles already cleaned or with a little soil?
The best truffle is often found not completely clean .
A residue of earth:
