Fresh premium white truffle (Tuber magnatum Pico) is considered the rarest and most prestigious truffle in Italian gastronomy. Its intense, complex and unmistakable aroma makes it one of the most sought-after ingredients among chefs and food enthusiasts around the world.
The white truffle is sold by weight, in mixed sizes from 6 to 30 g.
This precious truffle grows wild in the woods in symbiosis with trees such as oak, hazel, poplar and lime, developing in soil rich in minerals and moisture, typical of certain areas suited to truffle hunting.
Visually, it presents a smooth surface in ochre-yellow or beige tones, while inside it shows a marbled flesh crossed by fine white veining, a sign of freshness and optimal ripeness.
Its aroma is unique: intense, penetrating and elegant, with notes reminiscent of woodland undergrowth, aged cheese and delicate garlicky nuances. Thanks to its unmistakable scent, white truffle is considered a true excellence of Italian cuisine.
White truffle season
Premium white truffle is a highly seasonal product.
Harvesting generally takes place between October and January, with the period of peak ripeness between October and November, when its aroma and flavour characteristics reach their peak.
The availability of white truffle can vary from year to year depending on weather conditions and the quantity found in nature.
How to use white truffle in the kitchen
Fresh white truffle is traditionally used raw, because cooking reduces its delicate aroma.
To best appreciate its scent, we recommend slicing it thinly with a truffle slicer directly over the hot dish.
The most classic pairings are:
- tagliolini with butter
- risotto
- fried eggs
- meat carpaccio
- fondue and delicate cheeses
The heat of the dish allows the white truffle to fully release its aroma.
How to store fresh white truffle
Fresh white truffle is a very delicate product and must be stored with care.
To best preserve its aroma, we recommend:
- storing it in the fridge between 2°C and 6°C
- wrapping it in absorbent paper
- placing it in an airtight container
- changing the paper every day
To fully enjoy its aroma, it's best to consume it within a few days of harvest.
How much does white truffle cost
The price of white truffle varies depending on several factors:
- harvest season
- natural availability
- size and shape of the truffle
- quality and freshness
Being a rare species that is difficult to cultivate, Tuber magnatum is considered the most expensive and prestigious truffle on the gastronomic market.
