The Bianchetto Truffle (Tuber borchii Vittadini) – also known as Marzuolo or Spring Truffle – is a highly prized truffle species harvested from January to April in the forests of central and northern Italy.
Often confused with its prestigious cousin the White Truffle (Tuber magnatum Pico), the Bianchetto is smaller and more intensely aromatic, with a characteristic pungent, garlicky-phenolic scent that matures and softens as the season progresses.
At Luna Nuova Tartufi, each Bianchetto is hand-picked by expert truffle hunters, carefully cleaned and dispatched within 24 hours of harvest to guarantee maximum freshness.
Seasonality: January – April. Flavour: intensely aromatic, pungent, with garlicky and phenolic notes.
