Organic Savoury Almond Tesserae – Biscotti Bizantini
The almonds used in this recipe are "activated": soaked and then dried, a process that makes them more digestible and concentrates their flavour.
Produced by the Mazzoni Bakery of Ravenna in the same artisanal line as the famous mosaic-shaped tesserae, these savoury ones combine type "0" soft wheat flour, activated almonds (13.4%), high-oleic sunflower oil and rice syrup, with the ever-present rosemary extract as a natural antioxidant.
The biscuit is crunchy, with a full, lightly toasted taste from the almonds, less assertive than the pumpkin seeds but just as distinctive. Organic and 100% plant-based.
Ideal for an aperitif, perhaps paired with a cheese spread or a board of cured meats.
