Organic Coffee Sweet Tesserae – Biscotti Bizantini
The recipe comes from an old Jewish cookbook, found in the 1970s by a Latin teacher in his small bookshop in Marina di Ravenna.
From then on it was his wife Franca who made these biscuits for children, grandchildren and friends, passing the recipe down in the family for decades. In 2021, in the middle of the pandemic, Jacopo Randi and Lorenzo Sirotti decided to turn it into a real project, registering the Biscotti Bizantini brand and entrusting artisanal production to the Mazzoni Bakery of Ravenna.
This coffee version combines type "0" soft wheat flour, cane sugar and high-oleic sunflower oil with coffee (2.5%) and natural coffee flavouring (1.3%), with rosemary extract as a natural antioxidant. The result is a crumbly biscuit with a decisive, lightly toasted taste, organic and 100% plant-based.
Perfect for breakfast or to accompany coffee itself, mid-morning or after lunch.
