A condiment with PGI Balsamic Vinegar of Modena, produced by Acetaia Malpighi, a Modena business active since 1850 and now in its fifth generation of the Malpighi family.

The recipe combines cooked grape must and PGI Balsamic Vinegar of Modena (20%), in a density designed to coat dishes without running: the texture is syrupy, the taste the typical sweet-and-sour flavour of Modena balsamic.

Drizzle over aged cheeses, carpaccio, strawberries, or vanilla ice cream.
