Sangiovese "Galante" – Romagna DOC Appassimento
The grapes are left to dry for 7 weeks even before becoming wine.
"Galante" relies on an ancient winemaking method, appassimento: the best bunches are selected right in the vineyard and set to dry slowly in the drying rooms of the winery in Coriano di Rimini. The wine is produced by Terre Cevico, the large Romagna cooperative born in Lugo (Ravenna) in 1963.
In the glass it shows an intense violet hue; the aromas follow one another between berries, ripe cherry, cocoa, roasted coffee and dried plum, with a hint of violet on the finish. The sip is dry and enveloping, with a present but not aggressive tannin, thanks also to the ageing split between large cask (30%) and cement (70%).
A red designed to accompany the whole meal: good with both flavourful first courses and a white meat roast, up to aged cheeses, served around 18°C.
