Pure cooked grape must, without any added vinegar, from Acetaia Malpighi — the same raw material from which, since 1850, the company has been creating its traditional balsamic vinegar in the more than 3,500 barrels of its acetaia.
Saba is the base ingredient from which traditional balsamic vinegar is born, before acetic fermentation: a single ingredient, cooked grape must, with a sweet, dense taste and no acidity at all.
Used in Emilia-Romagna to dress fruit, zabaglione, or as a base for marinades and traditional desserts.
