Pearls with Balsamic Vinegar of Modena PGI
Small pearls of Balsamic Vinegar of Modena PGI (minimum 80%), from Acetaia Malpighi of Modena, designed to burst in the mouth like a balsamic vinegar caviar.
The spherification technique uses gelling agents (calcium chloride, sodium alginate) to enclose the balsamic in small pearls, keeping the sweet-and-sour taste of the vinegar intact.
Use to decorate cheese plates, carpaccio, desserts, or as a finishing touch on a risotto.
Origin: Modena (Emilia-Romagna, Italy)
