Artisan Forest Honey from the Marche

It doesn't come from flowers.

Forest honey is a honeydew honey: bees don't collect nectar, but the sugary substance that certain insects secrete while feeding on the sap of oak, chestnut and beech trees. It's one of the most unusual and least common productions in Italian beekeeping, only possible in the right years and the right woods.

Ours comes from the unspoiled woods of the Marche. The result is a dark, dense honey with a bold, not-too-sweet flavour, with malty, resinous and lightly smoky notes — the opposite of acacia's delicacy, and it's no coincidence that it's the favourite of those looking for a honey to pair with food, not just spread on bread.

It's at its best with aged cheeses and meats, but also simply by the spoonful for those who love bold, authentic flavours.
