Organic Merlot "from lightly dried grapes" – Rubicone IGT

Fifteen-year-old vines sink their roots into the clay of Coriano, at just over 150 metres of altitude in the Rimini hinterland near the Adriatic coast.

It is here that Terre Cevico grows the grapes for this Merlot organically. The harvest is entirely manual, with bunches picked into low crates and left to dry for a short period directly on the vine before the actual harvest: a technique that concentrates aromas and sugars without upsetting the grape's varietal character.

The colour is a bright red turning to garnet; on the nose, ripe fruit prevails, cherry above all, accompanied by a pleasant savouriness, while the sip flows soft and full.

Pairs well with medium-bodied dishes: pasta with meat ragù, grilled white and red meats, medium-aged cheeses.
