Grillo Sicilia DOC "Acacia" 2024 – Colosi
It is not aged in oak barrique, but in acacia barrels: a choice that softens the wine without covering its character.
Cantine Colosi was founded in San Pier Niceto, in the province of Messina, in the 1940s; in 2007 production moved to the Giammoro facility, near Milazzo, where today the Colosi family is best known for Malvasia delle Lipari. Alongside this sweet tradition, the winery also carries forward a line of dry wines from Sicilian grape varieties, including this Grillo.
After fermentation, the wine rests for four months in acacia barrels, which give it an elegant touch of vanilla and a pleasant roundness. Bright straw-yellow colour; nose of ripe white fruit and tropical fruit; palate where citrus intertwines with the delicate spiciness of the acacia wood.
Perfect with fresh fish dishes, shellfish and raw seafood, but also with Sicilian-style vegetable couscous.
