Grappa di Rebola – Il Cerro
Rebola is among the most aromatic white grapes of Romagna: the same intensity it gives its wines is found, concentrated, in this grappa.
Produced by Il Cerro, the micro-distillery Enrico Venturini started in 2024 in Cerreto di Saludecio — the first in Emilia-Romagna to work only regional grape varieties — this grappa is made from Rebola pomace processed just a few hours after the harvest, between September and November, to capture its aromatic load before it disperses.
The result is a young grappa, not aged in wood, with a distinctly aromatic and floral profile, more intense and recognisable than grappas from more neutral white varieties: a spirit that carries in every sip the fruity character typical of this grape.
To enjoy as a digestif, served chilled to fully appreciate its aromatic component.
