Grappa di Pagadebit – Il Cerro
The name Pagadebit ("pays the debts") tells of a grape that in Romagna never let the farmer down, productive and reliable even in the toughest vintages.
It is one of the most identity-defining white grapes of the region, and it is the raw material chosen by Il Cerro, Enrico Venturini's micro-distillery in Cerreto di Saludecio: the first producer in Emilia-Romagna to work exclusively with Romagna grape varieties, with production limited to 1,500 bottles a year, distilling fresh pomace right after the harvest to preserve its aromas intact.
Being a white grape, the resulting grappa is young and light, with a more delicate profile than grappas from red varieties: fresh, fruity aromas, a soft, clean sip, without the passage through wood that would weigh down this delicacy.
Excellent as a digestif served chilled, around 10-12°C, to enhance its aromatic freshness.
