DolceMiele – Il Lorese

Honey (10%) replaces part of the sugar in the dough: an ancient way of sweetening baked goods, before refined sugar became the norm in Marche households.

Azienda Agricola Il Lorese of Loro Piceno prepares these biscuits with soft wheat flour, butter, raw cane sugar, honey, fresh eggs and milk, in a simple recipe that lets honey take centre stage in the final flavour.

The result is a soft, fragrant biscuit, with the rounded sweetness typical of honey in place of the more direct sweetness of refined sugar, and an aftertaste reminiscent of homemade sweets.

Excellent for breakfast or as a mid-day treat, perhaps with a tea.
