Crémant d'Alsace – Domaine Mochel-Lorentz
It rests at least 18 months on its lees before disgorgement, double the minimum required by the Crémant d'Alsace regulations, set at 9 months.
In Traenheim, along the Route des Vins d'Alsace, the same family has worked the land uninterruptedly since 1634, generation after generation in the same cellar. The 15 hectares farmed on clay-limestone soils have earned High Environmental Value certification, and since 2020 the estate has begun converting to organic farming.
Made from a blend of Pinot Blanc and Auxerrois using the traditional method, it has a fine, persistent mousse and a full, lively sip: the long time on the lees gives it roundness and a pleasant creaminess of perlage.
Serve as an aperitif, but also throughout the meal: excellent with shellfish and fish, white meats, game, some cheeses and lightly sweet desserts.
