Wine and Sour Cherry Ring Biscuits – Il Lorese

Visciola, the small wild sour cherry that grows spontaneously in the Marche countryside, is fermented together with wine before entering the dough.

Azienda Agricola Il Lorese of Loro Piceno uses for these ring biscuits the same wine-and-visciola blend (15% of the dough) that characterises its production of liqueurs and fruit wines, in a tradition that in this part of the Marche has always accompanied Vino Cotto. Soft wheat flour, sugar and high-oleic sunflower oil complete the recipe.

The result is a pink-amber coloured biscuit, with a fruity, slightly tart aroma that stands out clearly from the line's other ring biscuits, more tied to white wine or vino cotto.

Excellent at the end of a meal, on their own or with a glass of dessert wine.
