Of the 9 total hectares of the Premier Cru Côte de Léchet, Domaine Defaix alone owns 9: it is the largest single owner of this cru.
Bernard Defaix founded the estate in 1959, starting from just 2 hectares; today it is run by his sons Didier and Sylvain, over some 27 hectares across Chablis, Petit Chablis and three Premiers Crus. Since 2009 the vineyard has been organic-certified (Ecocert), and the cellar follows biodynamic practices.
The limestone of Côte de Léchet is felt throughout: a nose of white peach, apricot and flint, with a note of crushed chalk. On the palate it is taut, almost razor-sharp in its mineral saltiness, yet with a creamy roundness that balances the lively acidity of the finish.
Pair with fatty fish and shellfish, oysters, poultry in butter or cream sauce, and a well-creamed risotto.
