Amarone della Valpolicella Classico – Corte Pietra

One hundred to one hundred twenty days: that's how long the grapes hang in the drying lofts before becoming wine, losing about a third of their weight in water and concentrating sugars and colouring matter.

This is appassimento, the process that makes Amarone unique in the Italian winemaking landscape: hand-harvested in the Classica zone of Valpolicella (the hills of Fumane, Marano, Negrar, San Pietro in Cariano and Sant'Ambrogio), the bunches of Corvina, Corvinone, Rondinella and Molinara are selected and laid out on racks or in perforated crates, where they remain until well into January. Only then do vinification and long maceration begin. Corte Pietra follows this method for its Amarone Classico DOCG, achieving a wine of decisive character.

The colour is deep, almost impenetrable, with hues leaning toward dark garnet. The nose moves between dark fruit and a touch of mossy undergrowth; on the palate it stays dry and warm, with a slightly bitter finish where blackberry, ripe cherry, liquorice and a hint of violet petals re-emerge.

A meditation wine, but also a wine for important meals: excellent with braised and stewed meats, game, aged cheeses such as Monte Veronese or long-aged Grana Padano, and with risotto all'Amarone, the signature dish of Veronese cuisine.
