Acino Bianco

A white condiment made from acetified white grape must, aged in small ash barrels by Acetaia Malpighi of Modena.

Unlike the dark condiments based on cooked must, Acino Bianco is made from a single ingredient: acetified white grape must, refined in ash wood, which gives it a light colour and a more delicate taste than traditional balsamic.

Use on fish, delicate salads, or steamed vegetables, where it should not cover the flavour of the dish.
