A Balsamic Vinegar of Modena with Protected Geographical Indication, high-density "Gold" version, from Acetaia Malpighi — a company that keeps over 3,500 barrels ageing and holds DOP, PGI, organic and IFS certifications.
PGI certified by a Control Body authorised by the Italian Ministry of Agriculture (Masaf), with a minimum acidity of 6%. The presence of only cooked grape must and wine vinegar among the ingredients is typical of the denser, more concentrated versions of this product.
Ideal on grilled meats, aged cheeses, or to intensify a risotto.
