White Truffle vs Black Truffle: Differences, Uses and Prices

Alessandro Spadoni

When it comes to truffles, the most common question is always the same: white truffle or black truffle? The answer depends on the use, the season, and of course the budget. In this guide we explain everything you need to know to choose the right truffle for every occasion.

White Truffle (Tuber magnatum Pico)

White truffle is universally considered the king of truffles. It grows spontaneously in oak, lime, and willow forests of central and northern Italy, particularly in the areas of Alba, Acqualagna, and the hills of Romagna and Marche.

Characteristics:

  • Aroma: extremely intense, complex, with notes of garlic, honey, and damp woodland
  • Season: October – December (peak in November)
  • Colour: ochre/yellow exterior, light beige interior with white veining
  • Use: always and only raw, grated or sliced directly onto the warm dish
  • Price: the highest, ranging between €200 and €5,000/kg depending on season and availability

Black Truffle (Tuber melanosporum)

Black truffle, also known as "Périgord" or the "black diamond of the kitchen", is the prince of winter truffles. It grows mainly in France, Spain, and some areas of central Italy.

Characteristics:

  • Aroma: intense, earthy, with notes of cocoa, woodland, and spices
  • Season: November – March
  • Colour: rough black exterior, dark interior with white veining
  • Use: raw or lightly heated, it withstands heat better than white truffle
  • Price: high but lower than white, between €500 and €2,500/kg

Which one to choose?

Choose white truffle for special occasions when you want to impress with an incomparable fragrance and unique flavour. Choose black truffle for preparations where the truffle needs to withstand a light amount of heat, or when you are looking for a more earthy, complex aromatic profile at a slightly more accessible price.

For those who want to enjoy truffle all year round, our white truffle condiment and black truffle condiment are the perfect solution.
