The distillery is the project of Enrico Venturini, who at 14 started distilling with his grandfather's small still — a local grape grower — before building one of his own. Today it produces at most 1,500 bottles a year, working the freshest pomace collected right after the harvest, between September and November, to preserve aromas and quality.\u003c\/p\u003e\n\u003cp\u003eThis grappa is made from Sangiovese pomace, the most identity-defining red grape of Romagna.
